How’s everyones summer going? It's been a real long time since I have posted here.
My expertise is not in writing, so it is always at the very bottom of my list. I am trying to turn over a new leaf and stay more present with my blogs. I am aiming for every other Monday, contributing content. It might be recipes, lifestyle tips, what's going on with Encompassing You and what I have been up to personally.
It was such a beautiful summer day today. I hope you all had a chance to get outdoors and able to connect with nature.
I wanted to let you know a little bit about what you’re going to see for the next 30 days on Encompassing You’s face book page. I have returned to my roots in my health coaching business.
Can you take a guess? I’ll clue you in, plant based, plant based and plant based.
Seriously, I will no longer be speaking about protein from animal sources or coaching anything meat. (I do respect anyone that eats clean sourced meat.)
Vegan. The word is sometimes associated with skinny and gangly.
However, it is possible to be muscular, physically fit, and even bulky as a vegan. Some of the world’s most successful athletes are vegans. For instance, Brendan Barzier, Carl Lewis, Tia Blanco, Mike Tyson, Venus Williams, and Heather Mills are vegan to name a few.
Due to lack of education, a protein-filled diet is often associated with just meat eaters. In actuality, there are plenty of plant based ways vegetarian and vegans get their protein.
I just wanted to give you a little something to think about before 2018. I think this year will be the year that we all want to take a little more time for ourselves. Have more gratitude, love, kindness, and abundant health. Enjoy the read.
Setting New Year Goals
As the New Year dawns upon us, so does the possibility of the new you. It is an unavoidable hope that the New Year will bring a clean slate for us to write our lives the way we want it to be. It is a beautiful belief to hold that we will regenerate and rebuild as the year starts again. So, we inevitably set standards for ourselves to meet, a version of ourselves that becomes our new inspiration. We try and try again each year but often we find ourselves falling short of the person we set out to become with full conviction on New Year’s Eve.

2017, WOW!! you had me movin' and a shakin'. Some days feeling completely unbalanced other days blessed with love and gratitude.
As the year comes to an end and I look back on all of the amazing mild stones the year presented. For me it was the birth of our first grandchild in Alaska, to the marriage of our oldest daughter in Chelsea.
We also experienced death and sorrows.
It is hard to maintain a positive attitude, healthy food choices along with a measure of faith. Raw emotions are challenging to say the least, but life has taught me through times of constriction we benefit because difficulty helps us to grow.
It has been a solid year that I have been Health Coaching and my clients have taught me so much. The biggest challenge for me was teaching how to bridge together food and thoughts. We are emotional beings, we enjoy food. I was my biggest guinea pig.
My observation is that we as Americans celebrate everything with food...
Do you feel overwhelmed when you shop for Protein Powders? Here’s a few things to keep in mind when shopping for one. 🌱Don’t fall into the fancy marketing scam, that sucks you down the rabbit hole, meaning franken food(not real food)ingredients. 🌱Hidden sugars 🌱Know your product, read reviews, recognize that words like natural don’t mean organic! 🌱If you can’t pronounce it, it is probably synthetic. 🌱Shop for organic. 🌱Lok for the non GMO label.(The certified blue butterfly is the label to look for.) 🌱If buying a flavored protein powder, think of the recipes you will be using. Will that particular flavor hinder the taste. 🌱Look for the amount if protein per serving. It is getting to be that time of year that I love, time for farmers market. What is your favorite farmers market? Why should you shop and eat local? Here is a few reasons why;
It’s Healthier When it’s freshly pulled from the ground or picked from the tree from a farm near you, your produce is more alive and retains more nutrients. It tastes better with produce traveling just a few hours or less from a local farm, produce is fresher and you can taste the difference
It’s Earth Friendly Delivering local produce to your neighborhood burns less fossil fuel, which is kinder to Mother Nature. Don’t pay airfare for your apples! It Helps Your Neighbors Buying directly from a local farmer supports YOUR community’s economy and creates more jobs for local residents.

One of my favorite ways is to cook for Spring is batch cook. Cook once and eat twice. We are all getting so busy with sporting events, yard work, gardening and just wanting to be outdoors.
Grains, beans, nuts and seeds are a perfect whole food for the family. You should be sure to soak them first.
You should soak them especially if you have experienced belly bloat, weight gain, or bowel issues, or even feel tired after eating. By focusing on gut health you will want to do the following:
Soaking all grains, beans, seeds and nuts.
This method removes phytic acid from grains, beans, seeds, and nuts. Phytic Acid is a compound that comes from the phosphorus found in plants. It leaches minerals from your body and can cause digestive and thyroid issues.
1. Add the grains, beans, seeds or nuts to a bowl of warm water or room temperature water.
2. Add 1 to 2 Tablespoons of lemon juice or Bragg's raw apple cider vinegar.
